But the most exciting ceremony is the traditional art of sabrage\, using an authentic saber to open a bottle of sparkling wine. The legend behind sabrage is connected to The French Revolution when Napoleon\, a noted fan of Champagne\, would take victorious rides through the countryside. As he and his cavalry passed through the towns\, villagers lined the streets to toss them bottles of Champagne in celebration. Unable to open the bottles by hand from their horses\, the soldiers simply struck them open using their sabers. \nIn the Breathless sabrage experience\, receive one-on-one instruction from our experienced guide who will teach you the proper technique of opening a bottle of Champagne using impact from the blunt side of a saber. Our executive chef’s modernist cuisine will showcase seasonal ingredients from our garden and local farms—all paired with multiple vintages of Jordan Chardonnay and Cabernet Sauvignon. The evening will also include a side-by-side vintage comparison in magnums\, where you will learn more about the benefits of large-format bottles. \nGuests will be seated at communal tables in the Jordan dining room. Due to the theme of the dinner\, we unfortunately cannot accommodate vegan or pescatarian diets. Any requests to change the set menu will result in an all-vegetarian\, gluten-free menu. Please make these special arrangements at least seven days in advance of the event. DESCRIPTION:  \n \n  \nRio Lindo Trail Run in Healdsburg\nEach year\, the Trail Run gets bigger and better! This trail run is one of the most beautiful runs you will do all year. Both the 5k and 10k courses feature single track trails as well as 4×4 trails and fire roads. The elevation change from the highest point of the run to the lowest point of the run is only 200 feet. However\, don’t let that fool you as some parts of the trail switch back up the 200 feet rather quickly. While on the trails\, you will run along the Russian River\, through apple orchards\, through mossy wooded areas\, including redwoods\, and finally by small creeks and open fields of tall grass. This race has it all and is perfect for both the novice and experienced trail runner. \nEvent details and schedule \n\nRace registration will begin at 7:30 on race day. Both 5k\, and 10k races will start at 9:00 am.
